Tough polypropylene handles with full, visible tangs and the traditional three rivets distinguish Classic knives from Wsthofs other cutlery lines. Otherwise Classic knives are identical to other Wsthof knives, embodying all the virtues that have earned the German manufacturer world renown. The principal parts of a Wsthof knife--blade, bolster, and tang--are forged from a single piece of high-carbon stainless steel, and the blade is precisely tapered from bolster to tip and from back to hand-honed edge. The blades and beautifully formed bolsters are not as thick as on some knives. As a result, despite their heft, strength, and durability, Wsthof knives are pleasingly delicate and marvelously balanced in action.
This 7-inch santoku is a Japanese cooks (or chefs) knife, featuring a low-tip style with a broad blade. The cutting edge is minimally curved, so it provides less rocking action than a European-style cooks knife. For straight-down slicing and precise chopping, however, its superb. I have been able to cook for perhaps 25 years. This is the sharpest and best weighted knife I have ever used. It really makes sense to buy a knife where one does not need to smash ones food to make thin slices of anything, including tomatoes.

I have been putting this off this addition to my cutlery for too long. It does a fabulous job of fine slicing and dicing for smaller needs not requiring heavy prep. work. I am impressed on how sharp it is - WOW! This is a small light knife, thats very well balanced and feels great in the hand.

This knife does the work of many different knives, including a meat cleaver. It is a sturdy compliment to other Wusthof knives that we have. They all have been good and hold their sharpness well.
